In Knead to Know: A History of Baking, food historian and chef Neil Buttery takes the reader on a journey exploring the creation, evolution and cultural importance of some of our most beloved baked foods, whether they be fit for a monarch's table, or served from the bakestone of a lowly farm labourer. This book charts innovations, happy accidents and some of the most downright bizarre baked foods ever created.

Everything has a history, but food history is special because it tells us so much about our culture and society, from the role of bread in the birth of human civilisation to the invention of the wedding cake, the creation of the whisk, or the purpose of the fish heads in a star-gazy pie. Food history encompasses it all.

When we think of the evolution of something, we think every step is an improvement, an incremental elevation toward some peak of perfection. This is not always the case. Sometimes things have to become simpler, knowledge is lost and skills are forgotten. As a baker of historical foods, Neil Buttery demonstrates that forgotten recipes and traditional techniques are often worth trying out (and mentions a few that should perhaps be left in the past).

Phonology is the branch of linguistics that deals with the study of sound systems in language. It focuses on how sounds are used and organized in particular languages, and how they contribute to meaning. Phonology is a key component of linguistics, as it helps us understand the structure of speech and how language functions at a fundamental level. The study of phonology is concerned not only with individual speech sounds, known as phonemes, but also with how these sounds interact with each other within the rules of a given language. Unlike phonetics, which focuses on the physical properties of speech sounds, phonology is primarily concerned with how these sounds function within a linguistic system.
Phonology is essential for understanding the patterns and regularities in how sounds are produced and interpreted by speakers of a language. It provides insight into the ways in which sound systems vary across languages and how they are structured in the mind. Phonological systems may include a variety of elements, such as consonants, vowels, syllables, stress patterns, and intonation, each of which plays a crucial role in forming the spoken word. Phonology helps to identify which sounds are significant in a language and how these sounds are perceived and organized.

The language level B2 is an intermediate level, so that most of the course is devoted to topics such as work, characteristics and activities, while while the topics like travel, leisure and family are covered to a lesser extent, as they have been covered more extensively in the previous parts of the course. Each lesson contains six tracks. First, familiarize yourself with the actual vocabulary (tracks 1 and 2). In order to get a better grip over the new expressions in Italian, in track one you hear the Russianword twice.Next, you have a word followed by a contextual sentence, again in both translation options (tracks 3 and 4). Then you move on to complete sentences (tracks 5 and 6). ). Again, in track 5, you will hear the sentence in Russiantwice. Once you have mastered translating sentences from English into Russian(lesson 6) in the time gap before the English translation, you have won. The words alone will help you in understanding the meaning, but using the mastered complete sentences will help you communicate much better. There is a script to this course available for free download at www.audioacademyeu.eu which will make your activities with the course much more effective. In its introduction, you will find a learning guide along with helpful tips on how to make the lessons more effective and a lesson plan for you to record your learning progress. For each lesson there is one test of vocabulary and one test of sentences. The key to both tests is available right after the tests too In the third part of the script you will find double-sided flashcards that you can cut out with scissors and practice even when you can't or don't want to listen. Pitmaticbrings together a wonderful regional pit language – its words, jokes and stories that are fast disappearing from our culture. This book helps attest to the remarkable vitality of the region's dialect and the inventiveness and humour of its speakers.
The last major mine in the North East region closed in 2005 and with it went a way of life. Through dialect words, humour, stories and songs Pitmatic will help you to understand the everyday lives and work of miners. Miners who provided fuel, helped sustain an economy, consolidated communities and created a unique and rich regional culture. This book is a joyous celebration of the history of the North East bringing together the words spoken by miners and their families and how they related to the wider languages of the world.

The late Bill Griffiths (1948–2007)was an extraordinary writer and poet: radical, experimental and scholarly, but also had a great sense of humour. He was a wonderful champion of the North East, its people and heritage.
Born in Middlesex, he read history before graduating in 1969. Bill ran his own independent press and published political pamphlets and essays on the arts and poetry. After gaining a PhD in Old English he fled London and settled in Seaham where he embraced the northern way of life.
'He was also a scholar of Old English and dialect who know how to make his work accessible. Private and uncompetitive, he was at least these things: poet, archivist, scholar, translator, prison-rights campaigner, pianist, historian, curator, performer, editor, short-story writer, essayist, teacher, book-maker and lyricist… The Saturday before he died, Bill discharged himself from hospital to host the Dialect Day at the Morden Tower in Newcastle upon Tyne. He died as he lived: cataloguing, awarding Best Dialect prizes, opera on his radio, the poetry paramount.' Obituary, The Independent, 20 September 2007.
