This book highlights how snail harvesting embodies sustainable food practices and a deep connection to the natural environment. Delving into the life cycles of edible snails, the book uncovers optimal harvesting conditions, emphasizing the importance of zoology and ecology. It also reveals the historical significance of snail consumption, tracing its evolution from ancient times to present-day regional culinary practices. The book uniquely integrates scientific, cultural, and culinary perspectives, offering a comprehensive look at snail harvesting.

It begins by establishing the biological foundation for understanding snail harvesting. It then transitions to an exploration of the historical context of snail consumption. Dedicated chapters discuss sustainable harvesting techniques and the nutritional benefits of snails. If you were to ask people to tell you what it meant to be Amish, they would say, “It means living a simple, traditional life where the community is very tight knit, stay away from outsiders, and don’t use any technology invented after the dawn of the 20th century.” For the most part, this would be accurate. However, if that tenth person you asked happened to be Nana Ruth, my crooked backed, gnarled-faced, sharp-as-a-thumbtack grandmother, she would have a whole lot more to say about the matter. This is because, until the age of seventeen, Nana Ruth grew up in an Amish community known as the “Pennsylvania Dutch” out in Lancaster County, Pennsylvania.
When an Amish youth hit their late teens to early twenties, they’re allowed to go on a sort of “spring break” from being Amish, a ritual known as “Rumspringa.” Popular culture will often depict Rumspringa as a period of total anarchy for the participants, where they will wear scandalous clothing like t-shirts and jeans, dance to pop music they hear on the radio, and even watch daytime talk shows on the television. Plenty of partying and alcohol imbibing is included for good measure, just like many teens across the nation who are suddenly without parental guidance will indulge in. For Nana Ruth, though, Rumspringa was a far more mundane affair.

Join the call of a just kitchen: where meal preparation is as much an act of resistance against injustice as marches and protests.

For food and faith writers and podcasters Derrick Weston and Anna Woofenden, The Just Kitchen is about a passion for food, sharing meals, showing hospitality, and understanding cultures, faith traditions, food histories, and local foodways.

Their authentic podcast conversations spill over the pages of this book and explore how the kitchen can be a place where the things we care about most in the world are reflected in the foods we prepare and the way we prepare them. In a world where disconnection from the earth, our food, our faith, and each other is becoming the norm, Weston and Woofenden bring together voices of hope who are working for a world of organic reconnections. They invite us to dig deeply into the complexity of ecology and food systems, as well as how faith communities are connected to them.

This is an invitation to reprioritize the kitchen as a space for healing, community, activism, and celebration. Be inspired to see the sacred in the daily mundane, forge connection with the people and earth around you, and join the call of a just kitchen.

It will change the way you cook! Praise for So Fast, So Easy Pressure Cooker Cookbook “Beth Hensperger and Julie Kaufmann have done it again! So Fast, So Easy Pressure Cooker Cookbook is a treasure trove of delicious recipes, including 7-minute risottos, 5-minute chilis, and hearty stews ready in just 15 minutes. This book is a winner for anyone who is just starting out with the pressure cooker, as well as for more experienced cooks looking for fresh and exciting recipes for this wonderful cooker.” —Diane Phillips, author ofThe Everyday Rice Cooker “I confess. I own a French cocotte (pressure cooker) that I've never used. I've been too scared. Now, with this deeply intelligent and knowledgeable book at my side, I'm ready to do what I've watched my French friends do with aplomb for years: cook with a pressure cooker. I'll be making rich, deeply flavored beef stock in 1 hour instead of 12, and whipping up an unctuous dish of Veal Marengo in less than 15 minutes. Soup for dinner? Give me 5 to 7 minutes. I can't say enough good things about this book. The opening chapter, all about pressure cookers, is alone worth the price of the book.” —Georgeanne Brennan, owner of La Vie Rustic–Sustainable Living in the French Style, and author of Williams Sonoma Essentials of French Cooking  “I’ve read every page of this terrific new book, and every single recipe. It is a consummate guide to the technical aspects of the pressure cooker, providing answers to any question one could conceivably have about this important—and overlooked—piece of equipment all of us should own in the interest of energy conservation. The recipes are masterful and inspired. [Hensperger and Kaufmann] are from the old school of cookbook writers who speak to you from a profound base of knowledge, love, and understanding about the art, history, and science of cooking. So Fast, So Easy Pressure Cooker Cookbook offers delectable and inspired food for the home cook.” —Julie Della Croce, author of Italian Home Cooking
